Homemade Icecream with Dextrose


2 egg yolks                       150g Dextrose

250g cream                     1tsp vanilla essence

250g milk                         Pinch salt

Optional Ingredients

Pinch of cinnamon or 50g cocoa or 30g granulated/powdered coffee or 2 cloves & pulverised fruit (in food processor or thermomix).  Personally we like the cocoa option or else 2tbsp sugar-free peanut butter + 2 bananas


Place all ingredients except optional ones into a saucepan over medium heat and cook for 5 minutes, stirring constantly.

Place the mixture into a stainless steel bowl and stir in your optional ingredients (if using) and place into the freezer for 3-4 hours until firm but NOT frozen.

Take the ice cream from the freezer, cut into medium sized pieces and mix in a food processor on highest setting (or Thermomix Speed 9) for 30 seconds then shift to slower speed to mix. Return to freezer.

Enjoy your dessert and know there is no NASTY fructose in it (unless you added fruit & then you know EXACTLY how much!!)
